LOBSTER QUICHE
from the Nathaniel Bowditch

Lobster cut in pieces 3⁄4 cup
1⁄4 cup White Wine or Sherry
1 Cup Half & Half
1 Tbsp Butter
1 Tbsp Minced onion
1 Tbsp Salt
1⁄4 tsp. White pepper
4 Eggs (beaten)
1 1⁄2 cups Swiss cheese (shredded)
Pour wine over lobster, set aside.

Heat cream, butter, onion, salt, and pepper. Do not boil. Remove from heat and slowly add eggs.

Put cheese in bottom of prepared pie shell. Add Lobster & wine. Pour cream/egg mixture over it.

Bake at 375 until golden brown, approx. 35 min or until knife inserted comes out clean.
