MAINELY MARINATED BEET SALAD
From the Isaac H. Evans

1 #10 can of sliced beets, well drained
2 or 3 red onions, sliced thinly

Marinade:
1 1/2 cups wild blueberry vinegar (or white distilled vinegar)
2/3 cup candy cap mushroom oil or vegetable oil
3/4 cup maple syrup
salt and coarsely ground pepper to taste

Whisk ingredients for the marinade together in a large bowl. Toss beets and onions in marinade.
