CAPT. LINDA’S BLUEBERRY BUCKLE

Cream together:
1/4 cup margarine
3/4 cup sugar
Add:
1 egg
1/2 cup milk
Sift together and mix:
1/2 teaspoon salt
2 teaspoons baking powder
2 cups flour
Toss 1 c. blueberries in flour, then gently mix the berries into the batter. The batter will be very stiff.
Spread in greased 8” x 8” pan or if doubling the recipe, in a 9” x 13” pan.
Sprinkle with topping.
TOPPING
Mix together:
1/2 cup sugar
1/3 cup flour
1/2 teaspoon cinnamon
Cut in:
1/4 cup margarine
Bake at 350º F. for 30-40 min or until a toothpick inserted into the center of the buckle comes out clean.
