Cheesy baked chicken with summer veggies
This is an easy dish to make and tastes delicious!
3 or 4 chicken breasts
one red onion, finely sliced
two or three plum tomatoes
one or two zucchinis, thickly sliced: optional
2 Tbsp olive oil
1/4 cup soy sauce
1 1/2 or 2 Tbsp brown sugar
2 garlic cloves, chopped
salt and pepper to taste
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 cup shredded mozzarella cheese
Mix together the oil, soy sauce, brown sugar, spices and garlic.
Score the chicken a few times across the top of each piece to allow the marinade to sink in. In a medium sized bowl marinate the chicken in this mixture for at least a half hour.
In a roughly 8″ by 11″ shallow casserole dish, layout all of the onions across the bottom. Then, layer the tomatoes and zucchini on top of the onions, evenly across the dish.
Layout the chicken on the top layer and pour the marinade on top.
Bake at 375 degrees for roughly a half hour.
Sprinkle the shredded cheese on top of the chicken then return pan to the oven and bake until chicken is done.
Serve over rice, egg noodles, pasta or polenta!
